'Cixin' Vegetarian Lo Han Chai

How to prepare Vegetarian Lo Han Chai? 

Heat vegetable oil in wok. Stir fry chopped ginger until fragrant. Add chinese cabbage together dried mushroom and stir fry till softened (optional). Add ‘CIXIN’ Mock Lo Han Chai and bring to a boil then cover with lid and let the vegetables simmer for about 3 minutes. Anytime the water runs dry, you can top up with hot water or stock. When the vegetables are cooked and the water is reduced, add glass noodles (tang hoon) and stir briefly to allow the glass noodles (tang hoon) to absorb the sauce. Adjust the seasonings if necessary. Turn off heat and ready to serve.
